Next Level avocado Toast
do you really need a recipe for this?
Short answer: no - of course you don’t. But we all need some inspiration now and then! The flavours in this combination really do take your brunch game to next level - fresh mint and lime juice, warm Middle Eastern za’atar, and creamy feta. And because texture is so important, you’ve got the perfect crunch factor of the toasted sourdough and pepitas, to contrast the squishy, rich avocado.
This is a meal that will definitely keep you satisfied for hours on end, because the fats tell our brain to switch off hunger signals. Meaning you can go about your business with a nice full belly, and a smile.

A perfectly ripe avocado really is a dreamy and versatile thing. It’s full of monounsaturated fats - which is great for boosting your HDL or ‘good cholesterol’ levels. And here’s another really cool thing: research has found that avocado fat actually increases our intestinal absorption of carotinoids (colourful pigments like greens and oranges) in foods. So in short, adding avocado to salads, smoothies, dips and dressings will elevate the nutrient profile of your whole meal.
Avocado also has a surprising amount of fibre for such squishy fruit (about 4g/100g)! Part of this fibre are the prebiotics - fibres which preferentially feed our good gut bacteria. And in terms of key nutrients, avocados are a pretty perfect package, because along with other antioxidants naturally present, they are rich in both vitamin E and vitamin C, which means they are really good for a glowing complexion.
Swapsies
I know it might sound weird, but swapping the za’atar for a sprinkling of chilli flakes is a really nice take! You can add a fried or poached egg for more protein. And if you want a gluten free version, you could use arepas, or make a breakfast taco using warm corn tortillas!

Ingredients
Instructions
- Lightly toast the pumpkin seeds (about 2 minutes in a dry pan, over medium low heat) and set aside.
- If you're having the egg, fry or poach that now.
- Pop your toast in the toaster, peel your avocado and slice / dice / smash, according to preference.
- Once your toast is cooked, simply plate it, and layer on the avocado, feta, and pumpkin seeds, then drizzle some extra virgin olive oil over the top.
- Sprinkle with za'atar (or your spice of choice), squeeze over the lime juice and top with mint, and season with salt and pepper.
- If you're having the egg, plop it on top, and enjoy!
